Dido "La Solució Rosa" 2022

Sara Pérez and René Barbier son, in love with good rosé wines, have decided to make a strong commitment to this underrated style of wine and they have done so with total conviction. A wine made from different Garnacha grapes (grey, black, white) in search of volume and density, but also with Macabeo and Carignan to add acidity and Tempranillo to help balance the alcohol. After pressing all the varieties at the same time, the wine is fermented in old barrels over 10 years old. A very long fermentation of 6 months, followed by an ageing of 7-8 months in these same fermentation barrels. It is then transferred to a 4500l foudre over 50 years old, where it is aged for a further 10 months. A pale and aged rosé that follows the trend of the great rosés of the world! A Mediterranean wine, from the south, structured and with ageing capacity.
