The PradoRey winery cultivates 520 hectares of vineyards, located in the Real Sitio de Ventosilla estate in the east of the Ribera del Duero region. They aim for their wines to express the terroir, the estate, the grapes, and the soil, which are all essential parts of the final result. This Ribera del Duero wine cellar has been a ground-breaking one in many aspects: producing wines in the 'Roble' category, with only a short period of time in oak barrels, when many others produced wines with longer ageing under the 'Crianza' category or with no barrel ageing at all; producing the first rosé wine from Tempranillo and Merlot grapes fermented in barrels; using modern technology; bringing out the first wine made in clay jars... Adaro is a relatively new wine which holds a special place in the heart of the PradoRey winery. It was developed in homage to the founder of the cellar, Javier Cremades de Adaro — a passionate wine-lover who realized in the 1980s that these vineyards in the Ribera del Duero would be ideal for creating great wines faithfully reflecting their terroir. Adaro is made with Tempranillo grapes from Pago Salgüero, a clay heavy vineyard at an altitude of 800 metres which is currently being converted to organic vine cultivation. Traditional production methods are followed before the wine is aged for 12 months in French and Slovenian oak. Finally it is left to stand for 3 months in Nevers oak vats. Elegant and fresh, this is a splendid wine with an exquisite complexity. Adaro offers us a Picota cherry red colour with bluish hues and an intense nose. Aromas of red fruit stand out alongside vanilla and liquorice notes thanks to its time ageing in wood. Fresh and flavoursome on the palate, notes of ripe fruit blend in with mineral and balsamic hints. Its mouthwatering firm and velvety tannins make it very pleasant to drink and lead to a long and elegant finish.
