Terras Gauda is made using three traditional Galician varieties from the DO Rías Baixas appellation: Albariño (70%), Caiño (20%) and Loureiro (10%). The Albariño and Caiño vines are planted lower down than the Loureiro ones, with their earlier harvest meaning more concentration and body, and less acidity. Albariño brings fruity aromas and a full volume to the blend, whereas Caiño provides exotic fruit and balsamic aromas and, more importantly, the structure and individuality which makes Terras Gauda stand out from other Galician whites. The Loureiro grapes collected from higher plots ripen more slowly and have more complex aromas. Simply by looking at the fruit and touching it, you can appreciate the gentleness it brings to the finished wine. Squeezing the fruit a little, its floral character is instantly recognizable.
Each grape variety undergoes a process of cold maceration to extract the best qualities from the skins. Fermentation is then carried out at a low temperature in stainless steel tanks using natural yeast from the vineyards themselves. Finally, after standing to stabilize the wine, it is filtered and bottled.
The resulting product is a wine with great aromatic complexity, surrounded with notes of ripe peach, pineapple, refreshing citrus fruit, and hints of orange blossom. The vineyard soil expresses itself through delicate mineral and earthy hints, accompanied by pleasant touches of mint and bay leaves. Fresh but full-bodied in the mouth, it has a strong character and an excellent balance.
